Report: Eat veggies, stop climate change

A new report released Thursday indicated that eating eggplant might be good for more things than just your digestive system.

The United Nations announced the findings of its Environmental Impacts of Consumption and Production: Priority Products and Materials report, which concluded that reducing the consumption of meats and increasing vegetable intake instead would likely help save the world from climate change and could reduce world hunger and reliance on fuel.

The report reads, "A substantial reduction of impacts would only be possible with a substantial worldwide diet change."

Because of the high environmental impact associated with meat and dairy product production, eating meals consisting predominantly of vegetables would help stop and reverse the dangerous effects of climate change. Animal-product processing and production take up 70 percent of the world’s freshwater, according to the report, and also use enormous amounts of chemical fertilizers and pesticides that are harmful to our environment.

Focusing on eating more vegetables becomes especially important as the population continues to boom, creating more mouths to feed. The U.S. population rose by 0.97 percent last year, and world population is predicted to increase by 50 percent before 2050. Small lifestyle changes like eating more salads and veggie stir fries can make a very positive impact on the environment. And this is great news, considering the number of vegetarians in the U.S. grows every year. A 2008 report by the Vegetarian Times stated that 22.8 million Americans follow a "vegetarian-inclined" diet.

The announcement of this report comes only days before the UN’s World Environment Day, set to take place on June 5. This initiative, which has been in place for 35 years, hopes to place a grand global focus on environmental issues. World Environment Day’s main event will occur in Rwanda this year, featuring celebrity guest Don Cheadle. The event will encompass worldwide celebrations, including one in Brazil hosted by supermodel Gisele Bundchen.
